Ingredients
3 cups kale (chopped)
1 cup arugula
1/2 cup shredded red cabbage
1/2 avocado, diced
1/4 cup walnuts
1/4 cup blueberries
2 tbsp extra virgin olive oil
Juice of 1/2 lemon
Salt + pepper to taste
Preparation
Toss kale, arugula, and cabbage in a bowl.
Add avocado, walnuts, and blueberries.
Drizzle with olive oil and lemon juice.
Season with salt and pepper. Mix lightly and serve.
