About the Recipe

The Spartan Chicken & Farro Bowl is hearty fuel for endurance. Chicken rebuilds muscle, farro adds protein and complex carbs, and carrots deliver beta-carotene for immune strength.

Ingredients

  • 2 chicken breasts

  • 1 cup farro

  • 2 cups carrots, sliced into sticks

  • 1 tbsp olive oil

  • Salt, pepper, paprika

Preparation

  1. Season chicken with salt, pepper, paprika. Grill 6 minutes per side. Rest and slice.

  2. Cook farro in salted water or broth until tender (25 minutes).

  3. Roast carrot sticks at 400°F with olive oil and salt for 20 minutes.

  4. Assemble bowl with farro base, carrots, and chicken on top.
