Ingredients
6 lamb chops
2 tbsp olive oil
2 garlic cloves, minced
2 sprigs rosemary
2 cups carrots + parsnips, sticks
Salt + pepper
Preparation
Marinate lamb in olive oil, garlic, rosemary for 1 hour.
Roast carrots and parsnips at 400°F for 25 minutes.
Grill lamb chops 3–4 minutes per side until medium-rare.
Rest 5 minutes before serving with roasted vegetables.
