About the Recipe
Every week starts with a huddle, and every huddle needs fuel. Fluffy microwave eggs, black beans, and salsa rolled into a warm whole wheat tortilla. Wrap it in foil and eat it on the way to your first meeting. Richard tried one and immediately asked if he could make it with wild boar chorizo. I told him he is welcome to try, right after he learns to eat a burrito without wearing the salsa.
Ingredients
Cooking spray
1 large egg plus 2 egg whites
2 tbsp low sodium black beans, rinsed
2 tbsp shredded cheddar
1 small whole wheat tortilla
2 tbsp salsa
Preparation
Spray a microwave safe bowl and whisk in the egg and egg whites.
Microwave 45 seconds, stir, then 30 to 45 seconds more until fully set.
Warm the tortilla 10 seconds between damp paper towels.
Fill with the eggs, beans, cheddar, and salsa, then roll it up.
Microwave 15 seconds to melt the cheese.
Microwaves vary. Start with the shorter time and add 15 second bursts as needed.
