About the Recipe
A great pitch is short, clean, and lands every time. Same with this salmon. A fillet, a few lemon slices, and a handful of baby spinach steam together in one covered dish. About four minutes later, dinner is served and you look like a pro.
Ingredients
1 skinless salmon fillet (about 4 oz and 1 inch thick)
2 cups baby spinach
1 tsp olive oil
1/4 tsp dried dill
Small pinch of salt and black pepper
3 thin lemon slices
Preparation
Spread the spinach in a shallow microwave safe dish and set the salmon on top.
Brush the salmon with oil, season with dill, salt, and pepper, and lay the lemon slices on top.
Cover with a microwave safe lid or vented wrap.
Microwave 3 to 4 minutes, until the salmon flakes easily and reaches 145°F inside. Let it rest covered for a minute before serving.
Microwaves vary. Start with the shorter time and add 15 second bursts as needed.
