About the Recipe

The Savage Turkey Meatball Bowl is lean and powerful. Turkey packs protein without fat overload, quinoa brings amino acids and fiber, and zucchini adds antioxidants with low calories.

Ingredients

  • 1 lb lean ground turkey

  • 1 egg

  • 1/4 cup breadcrumbs (or almond flour)

  • 2 garlic cloves, minced

  • 1 tbsp Italian herbs

  • 1 cup quinoa

  • 2 cups zucchini slices

  • 1 tbsp olive oil

  • Salt + pepper

Preparation

  1. Mix turkey, egg, breadcrumbs, garlic, herbs. Form into meatballs.

  2. Bake at 375°F for 20 minutes.

  3. Cook quinoa in broth until fluffy.

  4. Toss zucchini slices in olive oil, roast 15 minutes at 400°F.

  5. Serve meatballs over quinoa with zucchini on the side.
