About the Recipe
The Titan’s Stuffed Bell Peppers are nutrient fortresses — hearty quinoa and beans combined with vegetables inside roasted pepper shells. Color, power, and endurance fuel.

Ingredients
- 4 bell peppers, halved, seeded 
- 1 cup quinoa, cooked 
- 1 can black beans, rinsed 
- 1 zucchini, diced 
- 1 onion, diced 
- 2 garlic cloves, minced 
- 1 tsp chili powder 
- 1 tbsp olive oil 
- Salt + pepper 
Preparation
- Roast pepper halves at 400°F for 15 minutes. 
- Sauté onion, zucchini, garlic until soft. Add quinoa, beans, chili powder. 
- Fill peppers with mixture. 
- Return to oven for 20 minutes. 
- Garnish with cilantro or parsley.
