About the Recipe

The Titan’s Stuffed Bell Peppers are nutrient fortresses — hearty quinoa and beans combined with vegetables inside roasted pepper shells. Color, power, and endurance fuel.

Ingredients

  • 4 bell peppers, halved, seeded

  • 1 cup quinoa, cooked

  • 1 can black beans, rinsed

  • 1 zucchini, diced

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 1 tsp chili powder

  • 1 tbsp olive oil

  • Salt + pepper

Preparation

  1. Roast pepper halves at 400°F for 15 minutes.

  2. Sauté onion, zucchini, garlic until soft. Add quinoa, beans, chili powder.

  3. Fill peppers with mixture.

  4. Return to oven for 20 minutes.

  5. Garnish with cilantro or parsley.
