About the Recipe
The Titan’s Stuffed Bell Peppers are nutrient fortresses — hearty quinoa and beans combined with vegetables inside roasted pepper shells. Color, power, and endurance fuel.

Ingredients
4 bell peppers, halved, seeded
1 cup quinoa, cooked
1 can black beans, rinsed
1 zucchini, diced
1 onion, diced
2 garlic cloves, minced
1 tsp chili powder
1 tbsp olive oil
Salt + pepper
Preparation
Roast pepper halves at 400°F for 15 minutes.
Sauté onion, zucchini, garlic until soft. Add quinoa, beans, chili powder.
Fill peppers with mixture.
Return to oven for 20 minutes.
Garnish with cilantro or parsley.
