Ingredients (1 serving):


3 whole eggs + 2 egg whites


1 cup spinach, chopped


1/2 cup mushrooms, sliced


1/4 cup diced onion


1 clove garlic, minced


1 tbsp olive oil


Pinch of red pepper flakes


Salt + pepper to taste


Directions:


Heat olive oil in a skillet. Add onion, garlic, and mushrooms. Cook until softened.


Toss in spinach, cook until wilted.


Whisk eggs and whites, pour over veggies. Season with salt, pepper, red pepper flakes.


Cook until set, fold, and plate.
